About
Okumidori is a prized tea cultivar known for producing Matcha with a deep, jade-green colour, a rich, velvety texture and offers a bolder flavour than more delicate cultivars like Seimei. Expect a harmonious balance of umami and gentle astringency, with subtle notes of steamed greens and minerality. Grown organically in the Yame region, renowned for its cool climate and nutrient-rich soil, this Matcha delivers a full-bodied and satisfying ceremonial experience.
Cultivation & Process
The Okumidori tea plants are shaded for 3 to 4 weeks before harvest, a traditional method that enhances chlorophyll levels and amino acid content, resulting in a deeper green leaf and pronounced umami taste. Post-harvest, the leaves are steamed to halt oxidation, then dried and sorted to remove stems and veins. At this stage, the resulting leaf is known as tencha. These tencha leaves are then ground into a fine powder using traditional stone mills, a meticulous process that preserves the tea's quality and flavour.
